Paleo Recipe for Mango Coconut Milk Pudding

MangoI was playing around with some mangos a few days ago and made this Paleo recipe for Mango Coconut Milk Pudding. I love mangos, but they are a pain to peel and slice up due to the pit inside. So this isn’t a super fast recipe, unless you’re much better at dicing than I am (and you probably are). Enjoy!

Ingredients:

  • 1 can whole coconut milk (doesn’t work with light)
  • 2 mangos, diced and pureed. Set aside a little of the diced fruit for later.
  • 1 egg yolk (save the egg white for an omelette)
  • 1/4 teaspoon of cinnamon
  • 1 teaspoon vanilla

Peel and dice the mangos. Set about 1 cup aside for later. Puree the rest in a blender.

Bring the coconut milk to a low simmer in a saucepan, just bubbling around the edges. Stir with whisk while bringing up to temp.

Beat the egg yolk in a small bowl. Using a ladle, take some of the hot coconut milk and slowly and carefully drip it into the egg yolk while whisking it. You don’t want to cook the egg yolk! You want to temper it and bring it slowly up temp. Add another ladle full of hot coconut milk, again slowly while whisking.

Add the coconut milk + egg mixture into the saucepan of coconut milk and bring back to a low boil. Not too high or it will scorch. Not too low or you will go crazy waiting for it to thicken. Keep whisking until it starts to really thicken into a pudding-like consistency. It won’t be as thick as regular pudding and unfortunately this step seemed to take a really long time. Patience…

Once it is decently thickened, turn off the heat and whisk in the vanilla and cinnamon. Then whisk in the mango puree.

Pour into the serving bowls or cups. If you like it hot, then enjoy right away. I think it tastes better cool. So I covered with cling wrap, pressed down against the pudding to prevent a skin from forming, and chilled in the fridge for an hour. Right before serving, I placed a few tablespoons of the fresh diced mango on top. Very tasty! The mango made it sweet enough for us, so no added sugars. If you are ok with honey or maple syrup (Primal vs. strict Paleo), feel free to add to sweeten a bit more. Enjoy!
